Atomy Good Gomtang

The ingredients and cooking method are the most important factors in making delicious gomtang. Atomy's Gomtang is made with 100% domestic castrated beef and bull Busan (bones). Among them, 50% of the bones are half bones (pelvic bones), which are expensive and not easily available at home, so the longer the soup is boiled, the darker the color and deeper the flavor. In addition, the patented process developed by applying the traditional method of boiling in a cauldron allows all the nutrients contained in the bones to be released. The flavor is richer and more savory. Above all, it creates a clean taste that is completely free of impurities and odor, so anyone can enjoy it without any pressure.


It doesn't end there. Once the broth is sufficiently cured, it is subjected to a cold aging process (below 10 ℃) for at least 12 hours to homogenize it. This makes the broth milky white and fresh, and the flavor is once again richer and cleaner. Atomy Good Galbitang

The flavor and nutrition of short ribs depends on the type of beef used and the nature of the seasoning. Atomy's Galbi Tang uses clean Australian Grade A beef, which is a fully grown castrated steer. The meat is tender, chewy, and free of off-flavors due to the use of full-grown castrated cattle. The grade of beef is important, but so is the cut of beef used. Atomy Good Ribs Soup uses back ribs, which are separated from brisket and flank steak, which have a strong protein flavor and are chewy. Since it uses only the "center cut," which is the center of the back ribs with the most meat, the ribs are rich and flavorful.

Atomy Good Yukgaejang

Yukgaejang has a variety of ingredients, so each ingredient is important, including beef, and the flavor is all about the synergy between them. Atomy's yukgaejang takes a lot of time and effort to make, from stir-frying each seasoning to trimming the beef.
First, the brisket is simmered in a rich bone broth for more than two hours. To this, the first special seasoning, made of domestic green onions, onions, and garlic, is added generously, and the second special seasoning, made of domestic Cheongyang chili powder and fragrant scallion oil, is added once more. The deep, rich broth flavor and the spicy yet refreshing taste of Yukgaejang is completed by the aesthetics of this time.

Yukgaejang has the freedom to transform into new recipes.
